Fall is here! Combined with an absolutely earth-shattering chill in the air.... the sun is brightly shining (FINALLY), the mums are basking in the breeze, and the house smells like apples, pumpkins, and cinnamon!
I love this time of year, but the bad part is that we know what follows. Yeah, you got it.. toes that need some sun and a pedicure!
We made our first trip of the season to the Franklin Cider Mill this week. http://www.franklincidermill.com/ What a great yummy place! The warm donuts and ice cold cider were heavenly.. but the apples were fantastic, too. (Especially the ones smothered in Caramel and dipped in peanuts...)
And, on a day like today, what better thing to do than make the best doggone soup around! Check it out! You won't be sorry. (make some cornbread to go along with.. mmm!)
Chicken & Black Bean Soup
2 16z cans black beans (undrained)
1 cup chicken broth
1 small onion, chopped
1 tsp minced garlic
16z thick & chunky salsa, any flavor
4tsp lime juice
2tsp cumin
1/4 tsp crushed red pepper
jalapenos, if desired (YUM!)
3-4 cooked and shredded chicken breasts
* place 1/2 can beans with liquid and the chicken broth in a blender or food processor. blend until smooth.
* coat large saucepan with cooking spray; heat over medium high heat. add onion & garlic, sautee 4-5 minutes until onion is tender.
* add all other ingredients except chicken into soup pot. bring to boil. reduce head to low and add chicken.
* cover... cook for 30 minutes.
* serve topped with low fat shredded cheese and reduced fat sour cream.
